Healthy and Delicious Cole Slaw as a Spaghetti Replacement
When the craving for sauced-up spaghetti hits but you don’t want to chow down a bunch of heavy carbs, try this broccoli cole slaw “spaghetti”. This shredded veggie mix is found with the bagged salads in the produce section — only 25 calories per cup.
Ingredients:
One 12-ounce bag (4 cups) broccoli cole slaw
1 cup canned crushed tomatoes (organic if possible)
1 teaspoon chopped garlic or more to taste
Dash onion powder, or more to taste
Dash each salt and pepper or more to taste
Dash of red pepper flakes, or more to taste
3 tablespoons Parmesean Cheese Flakes
Add low sodium organic Marinara Sauce on the top to taste.
Directions:
Bring a skillet sprayed with nonstick spray to medium-high heat. Add slaw and 1/4 cup water. Cook and stir until water has evaporated and slaw has slightly softened, 5 to 8 minutes.
Add tomatoes, garlic, seasonings, and 2 tablespoons Parmesan topping. Cook and stir until hot, 3 to 4 minutes.
Serve topped with remaining 1 tablespoon Parmesean cheese or extra Marinara.
PER SERVING (1/2 of recipe, 1 heaping cup): 148 calories, 3g fat, 610mg sodium, 24.5g carbs, 6g fiber, 10g sugars, 8g protein
