High nutrient and low calorie: a winning combo when you want to wave good bye to a couple pounds. This thigh-loving soup helps you achieve your weight loss goals as its high fibre and protein to help keep you full for hours.
- 1 large white onion, diced
- 4-5 cloves garlic, minced
- 1 cup celery, diced
- 1 cup carrots, diced
- Â¾ cup green peppers, chopped
- Â¾ cup red peppers, chopped
- 4 medium tomatoes crushed (or 1 16 oz. can crushed tomatoes)
- 1 Â½ cups broccoli florets
- 1 Â½ cups cauliflower florets
- 1 cup zucchini, chopped
- 1 14 oz. can red kidney beans
- 1 tsp paprika
- Â½ tsp dried oregano
- Salt and black pepper to taste
Fill a large pot with 6 cups water, add tomatoes, onion, celery, carrots, green pepper, red pepper and garlic and bring to boil. Continue to boil until veggies are soft, about 8 minutes. Then add broccoli, cauliflower, zucchini, kidney beans, paprika, oregano and a few grinds of fresh black pepper and continue to boil for another 5-10 minutes. Reduce to simmer and add a pinch of salt to taste. Ladle soup into bowls and serve with a few slices of sprouted grain bread on the side. This is another great soup to eat throughout the week or freeze for future meals!
