I wanted to share with you a clever recipe I saw on the Whole Foods Market website for a creative snack or even lunch:
1 large apple (granny smith or red of your choice) sliced in solid l/2″ thick circles like a disc; 2 Tablespoons of peanut or almond butter, divided; dried cranberries or low sugar granola sprinkled over the peanut/almond butter.
Take the apple slice and smear with almond/peanut butter and cranberries or granola over it. Make a sandwich with the two slices of apple as the “bread”. Its that easy!
Makes a healthy fruit, protein, fat and fiber snack or meal. If its your lunch, eat the whole apple and full serving of peanut butter and if its a snack eat half that portion and save for another time.

Ingredients:
· Oil spray
· 1 large bunch kale
· Kosher salt
Directions:
Preheat the oven to 400 degrees. Â Lightly coat baking sheet with oil spray. Â Trim the ends off the kale and tear leaves into 2-inch pieces and spread them onto the baking sheet. Â Mist the kale with oil spray and lightly sprinkle with salt. Â Bake for 10 minutes, or until the kale is crispy to the touch and the edges are beginning to brown.
