So here we are in the dead of winter…all of us waiting for the sun to poke out of the clouds and give us the warmth and brightness we crave. We get up, hopefully get some exercise, go to work and then we have to think about dinner. That’s why I’m here! I’m here to give you inspiration for eating, feeding and nourishing your body and soul with great healthy food.

My name is Rick Halberg and I have been at the forefront of the food scene here in the neighborhood for about 30 years. Many of you may remember me from R.I.K.’s Total Cuisine Center, R.I.K.’s the Restaurant, Emily’s or Tutto Bene. Some of you may even remember me from the Holly Hotel and when I worked with Allison on “Positive Performance” a mini fitness camp held in the summers of ’83-’85.

Enough reminiscing, let’s talk about food.

Winter is the time we need to feel soothed, the time we want those comfort foods like meat loaf, mashed potatoes, filling soups, and hearty pastas. The trouble is a lot of those meals are high in fat and calories. So what to do? Here are a couple suggestions; I love butternut squash. And there are so many things to do with it and they all fill that craving for buttery, mashed potatoes. Try baking it whole in a Pyrex pan, then splitting it and mashing it with a bit of maple syrup; caramelize some onions, make a pot of brown rice…and cuddle up with the family in front of a warm fireplace. If you want pasta, try your favorite Bolognese sauce recipe with lean ground turkey to replace the beef, pork and veal and substitute some extra broth for the heavy cream or use skim milk. The idea is to NOT stress about food…eat the right things and enjoy them!
