This is a total crowd pleaser.Â You wouldn’t think to put watermelon in a salad like this, but trust me, it is delicious!!! It is inspired from a recipe i got off of the food network, but i adjusted it a bit for my own tastes.Â I hope you like it as much as my family does! I usually double the recipe for a party.
For the dressing:
3 Tbs champagne vinegar
3 Tbs fresh lemon juice
2 Tbs chopped fresh mint leaves (from 3 or 4 sprigs)
1/4 tsp salt
1/8 tsp fresh ground pepper
3/4 cup grapeseed oil
For the salad:
1 medium package organic baby arugula
1/2 (or more to taste) hothouse or english cucmber, peeled seeded and medium diced
1 small seedless watermelon (or equivalent), in 1 inch cubes
3 ounces feta, small cubes or crumbled
Prepare dressing just before serving. Mix together all dressing ingredients except oil, then pour oil slowly in a thin stream, whisking the whole time until all of the oil is incorporated.
Put arugula, feta and cucumbers in a salad bowl.Â toss with just enough dressing to coat (again, to taste). Toss well.Â Add watermelon and gently mix to incorporate. Serve at once. Enjoy!!
