This is a delicious and simple recipe that will earn you rave reviews. It’s a perfect balance of sweet and salty and my husband gave it a 10. I hope you do too!
Ingredients:
1 large salmon filet
Lots of fresh dill
1 cup low-sodium soy sauce
1 cup apricot preserves*
Preheat oven to 350 degrees.
Mix together soy and preserves. Use slightly more preserves than soy, so sauce is not runny. You can do this in a blender or by hand. Pour half of sauce over salmon. Sprinkle generously with fresh dill. Pour more sauce on top of dill (reserving some for serving). Bake for 20-25 minutes. Serve with extra sauce on the side.
*Substitute low- or sugar-free preserves for a healthy alternative!
