Bulgur Fruit Salad


1-1/2 cups vegetable broth
1 cup bulgur
1/2 cup chopped cilantro
3 leaves fresh basil, chopped
3 green onions, chopped
1 red pepper, chopped
1/2 cup dried cranberries
1/2 cup chopped mango

1. Cook the broth and pour it over the bulgur in a large bowl. cover and let stand for 10 minutes, until the liquid is absorbed. Fluff with fork.

2. In a food processor, (steel blade) process the cilantro and add to bulgur. Process the onions and red pepper until coarsely chopped. Add to bulgur, Add the cranberries and mango.

For the dressing:
1/4 cup balsamic vinegar
1/4 cup orange juice
1/4 cup maple syrup
1tsp minced garlic

Blend together with mini immersion blender, or shake well in jar and pour over salad.

You can use parsley instead of cilantro or use different fruit. You can also use a different grain. Delicious!
