Bring on the Bulgur Salad

1 cup bulgur
1 cup boiling water
1/2 cup slivered almonds
1/4 cup raw sunflower seeds
4 green onions chopped
1 red pepper, seeded, chopped
1 yellow pepper, seeded, chopped
2 stalks celery
1/4 cup dried cranberries
3/4 cup dried chopped apricots

1. Place the bulgur in a large bowl and add the boiling water. cover and let it stand for about 20 minutes. Fluff with a fork, set aside.

2. Toast the almonds and sunflower seeds in oven 350 degrees for about 5 mins.

3. Add nuts, onions, peppers, celery, cranberries and apricots to the bulgur

4. Add the dressing and refrigerate

For the Dressing:
2-3 T. honey
2-3 T. lemon or orange juice
dash salt
fresh ground pepper
1/2 tsp cumin
1/2 tsp cinnamon
