Ask Tomato & Cucumber Salad With Basil & Parsley

A refreshing summer family favorite!

30 minutes to make — serves 4 — double or triple for leftovers

3 large ripe but firm organic tomatoes
coarsely chopped and leave the skin on
1/2 red onion, cut into thin half moon slices
1 large organic cucumber with skin, coarsely chopped
1 cup cooked or canned organic (rinsed) chick peas
1/2  cup chopped fresh basil
1/2 cup chopped fresh parsley
3 Tablespoons extra virgin organic olive oil
1 Tablespoon balsamic vinegar
sea salt to taste
cracked black pepper to taste

combine veggies and herbs in a bowl
whisk together oil,vinegar, salt and pepper
gently toss salad with dressing. Set aside to marinate for 30 minutes to make tomatoes easier to digest

This nutritious and delicious salad is also great served on top of grilled fish, chicken or your favorite veggie burger!
