1 1/2 cups of brown sugar
2 1/2 cups of rolled oats (steel cut are great)
1 teaspoon baking soda
1 teaspoon baking powder
4 cups flour (try whole grain baking flour)
5 eggs (organic free range)
1/2 cup vegetable oil or 1/4 cup plus 1 cup of Applesuace
1 teaspoon vanilla or almond extract
“Extras” chopped nuts like almonds, walnuts, or pecans. Seeds, like sunflower, sesame or flax; chopped dried fruit like raisins, cherries, dates, or cranberries; bitter/dark chocolate chips.
1. Combine first 5 ingredients in a bowl and mix well
2. Add eggs, vegetable oil, and extract; stir to blend
3. Add up to 1/2 cup of your choice of “extras”
4. Drop by rounded tablespoons onto a greased cookie sheet (try Pam baking spray)
5. Bake at 350 degrees F for 8-10 minutes
